Taco Spaghetti To Die For

I came up with this kid-friendly Southwestern recipe one afternoon when I was using up leftover spaghetti and ground beef. When I’m lucky enough to have extra time, I make two batches and freeze one.

Ingredients:

  • 12 ounces uncooked spaghetti
  • 1 pound ground beef
  • 1 envelope taco seasoning
  • 3/4 cup water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (10 ounces) diced tomatoes and green chiles, undrained
  • 2 cups shredded Mexican cheese blend, divided
  • 2/3 cup salsa
